Acadian Sturgeon and Caviar was founded in March 2015 by Dorina Ceapa and Cornel Ceapa. What’s so interesting about Cornel is that he’s the only person in Canada to hold a PhD in sturgeon biology. I had the pleasure to meet Cornel and his wife at this media event. And what’s a media event without taste testing some delicious new dishes right? Specifically, sturgeon caviar with Peruvian food in this case. I’ve had salmon caviar before, but I have never tried sturgeon caviar. So to have sturgeon caviar incorporated into different Peruvian dishes – it’s definitely a unique experience for me. I didn’t think that I could love Peruvian food more than I do already, but by adding sturgeon caviar…it takes these dishes to a whole new level!

Unfortunately, I don’t remember the name of this dish, but it was so flavourful!
